I have recently take the class ISYE 323 “Operations Research and Deterministic Modeling.” I found this class to be very eye-opening to the utility of linear programming. What are some upper level classes that go more in depth into this topic?

ISYE 524 is a great class that can help you extend your knowledge in this area.

I’m in 323 right now so I haven’t experienced the upper-level courses yet, but I’ve heard ISyE 524 and 525 dive deeper into linear/non-linear programming, and the background of the algorithms that form the optimization models.
